Soak tamarind in warm water for 15 minutes, extract the pulp and strain to remove seeds and fiber. Set aside.

In a large vessel, add chopped vegetables (drumsticks, carrots, brinjal) with 2 cups of water, turmeric powder and salt. Cook until vegetables are tender.

Add the mashed dal to the cooked vegetables and mix well. Add more water if needed to achieve desired consistency.

Pour in the tamarind extract and bring to a boil. Add sambar powder and mix thoroughly.

Add chopped tomatoes, onions and jaggery. Let it simmer for 10-12 minutes until all flavors blend together and raw smell disappears.

For tempering, heat oil in a small pan. Add mustard seeds and let them splutter.

Add dry red chillies, curry leaves and asafoetida to the tempering. Fry for few seconds.
