Add the grated cheese into the vegetable mixture. Season with black pepper powder, chaat masala, and salt. Add the chopped coriander leaves and mix everything together until well combined. Taste and adjust seasoning. The filling should be flavourful but not too salty since cheese already adds saltiness.
Take one bread slice and spread a thin layer of softened butter on one side. Place the buttered side down on your work surface. Add a generous portion of the vegetable cheese filling onto the unbuttered side of the bread, spreading it evenly up to the edges.
Take a second bread slice, butter one side, and place it buttered side up on top of the filling to form a sandwich. Press gently with your palm to seal the sandwich together. Repeat this process with the remaining bread slices and filling to make 4 sandwiches in total.
Heat a tawa or flat griddle on medium-low flame. Place the assembled sandwich on the tawa. Cook on medium-low heat for about 2 to 3 minutes until the bottom side turns golden brown and crispy. Press lightly with a spatula while it toasts to ensure even contact.
Carefully flip the sandwich using a wide spatula and toast the other side for another 2 to 3 minutes until it is equally golden and crispy. The cheese inside should be fully melted by now. If using a sandwich maker or grill press, cook as per the appliance instructions.
